Hearty Vegetable Lasagna:
Ingredients:
Lasagna Noodles 1 packet
Mushrooms (sliced) 1/2 Kg
Green Bell Pepper 3/4 cups
Chopped Onion 3/4 cups
Cloves minced 3
Garlic (as required)
Vegetable Oil 3 tbsp
Pasta Sauce 2 Jars
Dried Basil 1 tsp
Skimmed Ricotta Cheese 1/2 Kg
Eggs 2
Grated Parmesan Cheese 1/2 Cups
How to Cook:
- Boil Lasagna Noodles for 10 minutes.
- Then pass it through cold water and drain.
- In a large pan cook Mushrooms, garlic, onion and green bell peppers in oil.
- Now mix together pasta sauce and basil until it gets boiled.
- Now put it off from heat and simmer it for 15 mins.
- Now mix together Mozarella Cheese, eggs and ricotta.
- Heat oven at 350 F (175 C).
- Spread 1 cup tomato sauce into the bottom of a greased 9x13 inch baking dish.
- Layer 1/2 each, lasagna noodles, ricotta mix, sauce, and Parmesan cheese. Repeat layering, and top with remaining 2 cups mozzarella cheese.
- Bake it (uncovered) for 40 minutes.
- Leave it for 15 minutes after baking.
- Serve it and enjoy.
